Winemaking
A red wine made from 100% Muscat Bailey A harvested in 2023 on Omishima Island. Only fully ripe, deeply coloured grapes were carefully selected, and the whole clusters were fermented intact in tanks. While the typical maceration period for Muscat Bailey A red wine is around two weeks, this wine underwent an extended low-temperature maceration of about two and a half months. This allowed for full extraction from the skins, resulting in a deeper colour than usual, with plenty of fruit character and firm yet balanced tannins.
The year 2023 saw an exceptionally low annual rainfall of approximately 1,000 mm, resulting in a year with minimal rain and low disease pressure. However, temperatures were high, and nighttime temperatures during the summer remained elevated, making it particularly challenging to bring the grapes to full ripeness.
