Tasting notes
Aromas of wild berries, Shaoxing Jiu (Chinese alcohol) and prunes. On the palate, cloves, liquorice and ripe berries. Characterised by depth of flavour with earthiness and some truffle nuances. Dry leaf felt in Pinot Noir. Moderate tannins, gentle acidity.
Food pairing
Roast beef with gravy, Peking duck, spaghetti bolognese, beef steak, roast lamb, stuffed portobello mushrooms, Japanese-style grilled eel, pâté with black garlic
Winemaking
Made from grapes grown on old vines, very rare for Muscat Bailey A, 59 years old. The old vines yield less, but they taste better and the flavour deepens and the strength of the grapes increases with age. The vineyards, located at 310 metres above sea level, are stony and well drained with below-average rainfall. The grapes are grown using biodynamic methods. All grapes were harvested by hand in mid September, crushed by foot (while wearing a sanitary jacket) with whole bunches in tanks, then matured in French oak barrels for two years and one month. No sulphites added, unfiltered and unfined.
GUBI GUBI has been thankfully purchasing their wines since our launch in 2022. It is a great honour to be able to offer the wines of this winery, which produces only a small number of wines and uses Muscat Bailey A, a variety indigenous to Japan, to produce a wide variety of wines. The 2018 and 2019 vintage of Sage V.V. has been very popular and has wowed many wine lovers as well as natural wine enthusiasts. The total production is 732 bottles and GUBI GUBI has only 48 bottles in stock.
