Tasting notes
Aromas of clean citrus like lime and grapefruit, white flowers, flint and green apple. Slightly bodied but light. Citrus attack with green apple, clean acidity and minerality. Bottle should be uncorked 30 minutes before drinking.
Food pairing
Goes well with shellfish such as raw oysters, turban shells steamed in sake, scallop carpaccio. Sushi, milt in ponzu sauce, grilled prawns, potato salad, spring rolls, deep-fried chicken, beef tongue with salt, blue cheese
Winemaking
Cave d'Occi Winery's Doubutsu (= Animal) Series is a collection of wines vinified by winemaker Fumito Kakegawa, showcasing his personal passions and creative flair. The Penguin from the series was made from Kerner grapes from Hokkaido's Yoichi region, with the aim of achieving a gentle, body-penetrating flavour. A very hot vintage compared to previous years, characterised by concentrated fruit and moderate acidity.
After three days of skin contact at very low temperatures, fermentation was left to natural yeasts with Pied de Cuve. Fermentation and maturation took place in stainless steel tanks to preserve the grapes' natural flavour. The maturation period is approximately 6 months.
