Tasting notes
A delightful wine with tropical impressions and spice. Yellow peach, passion fruit, hops, oriental melon and pink pepper. When drunk chilled, the wine has a young acidity and a clean mouthfeel and flavour. When the temperature is raised to near room temperature, the wine turns into a rich, voluminous wine, with a full mouthfeel, intense aromas and mild acidity. It is recommended to finish it within five days.
Food pairing
Carpaccio of white fish, dishes with kombu-tied fish, marinated tomatoes with dashi and soy sauce, meuniere of white fish, sautéed pork.
Winemaking
Genchi, a wine with distinctive tropical flavours in the Neco series produced by Fattoria AL FIORE since 2016; until 2018, it was mainly made from Niagara, but it was difficult to find a high-quality Niagara, so from 2019 it was made from blending with Neo Muscat and Delaware. In the meantime, from 2020, the winemaker was commissioned to brew wines for a young farmer, Yuzuru Sasaki, in Shiwa, Iwate, where he encountered high-quality Niagara grown by him. Then, in 2023, he was able to purchase Niagara from Yuzuru and vinified it in a way similar to the original in 2016. By combining three different aromatic and flavoured grapes - Niagara, Neo-Muscat and Seibel - the Niagara is even better.
Niagara was foot-trodden in whole bunches and macerated for two days. Neo Muscat was placed in resin tanks with whole bunches, footstamped around the edges and macerated for nine days. Niagara and Neo Muscat were then pressed together, sur lie in resin tanks for a month. The wine was then transferred to stainless steel tanks to continue sur lie for two months. For Seibel, the destemmed grapes were macerated in resin tanks for a week. Transfer to stainless steel tanks for a month of sur lie. Finally, everything was blended and sur lie for 40 days in stainless steel tanks, then racked and continued sur lie for a month before bottling without filtration.
The name of the series, NECO, is a coined word combining the Italian words Nuova Esperimento (‘new and experimental’) and COoperazione (‘cooperation’) and the cats (猫 pronounced ‘neko’ ) that AL FIORE's representative, Mr. Hirotaka Meguro, lives with. Hirotaka has adopted cats he has met by chance in the fields and mountains as family members since he was a chef at a restaurant, and has named each wine after a cat, overlapping the unique characteristics of each cat with those of the wine. Genchi was found shivering in a convenience store near the restaurant and was named ‘Genchi’ in the hope that he would grow up to be healthy and robust, as he was frail.
