Tasting notes
A distinctive, funky orange wine with depth and complexity from ageing, complemented by a lively touch of volatile acidity. Layers of dried apricot, honeyed lemon, ginger and anise create an expressive and intriguing aromatic profile. On the palate, refreshing grapefruit bitterness and flavours of slightly underripe banana are accompanied by subtle spice and savoury umami notes. Gentle tannins from extended skin contact and a smooth texture add depth and structure to the wine. Best enjoyed at room temperature, allowing the fruit and spice aromas to open up and reveal a rounder, more complex character. Opening the bottle around 30 minutes before serving is recommended.
Food pairing
Spiced roast pork belly, tandoori chicken, miso-braised mackerel, miso-glazed aubergine, lamb and apricot tagine, roast duck with orange sauce, Japanese braised pork belly (kakuni), mushroom risotto, kimchi pancakes, dried shredded squid (saki-ika), aged Comté.
Winemaking
Anco is part of the NECO series by Fattoria AL FIORE, a line dedicated to experimental and collaborative expressions. This cuvée explores the full potential of Delaware through extended skin contact and oxidative aging.
The grapes undergo approximately four months of maceration, an unusually long period that allows for deep extraction of structure and aroma while softening the typical foxy character of the variety. Fermentation is carried out with indigenous yeasts without additives. The wine is aged in a combination of old barrels and amphora, enhancing complexity and texture. It is bottled unfiltered and without added sulphites.
The name “NECO” combines the Italian words Nuova Esperimento (new experiments) and COoperazione (cooperation), along with “neko” (cat in Japanese). Each wine is named after a rescued cat connected to the winery.
