Tasting notes
A richly expressive wine with tropical fruit character and subtle spice. Notes of nectarine, mango, and Japanese citrus reminiscent of kabosu unfold alongside flinty minerality, fresh aromas recalling young sanshō leaves, and a faint root-vegetable nuance reminiscent of carrot. Fresh and juicy, the wine has a light, easy-drinking palate while retaining a gentle, glossy depth. Served well chilled, its sharp acidity and clean profile stand out; as the temperature rises, the texture becomes rounder and the aromatics broaden, revealing further layers of fruit. Best enjoyed within a few days after opening.

Food pairing
Sea bream carpaccio, chirashi sushi, wild mountain vegetable tempura, shungiku ohitashi (blanched chrysanthemum greens in dashi-based seasoning), pork shabu-shabu, sanshō grilled chicken, green papaya salad, fresh spring rolls, bánh xèo, chilli prawns.

Winemaking
Genchi is part of the NECO series by Fattoria AL FIORE, a line dedicated to experimental and collaborative expressions. This cuvée focuses on bringing out the full potential of Niagara, a grape often associated with simple aromatics, by blending it with Neo Muscat and Seibel 9110 to create depth and balance.

Each grape variety was vinified separately, with gentle extraction achieved through skin contact. After two weeks of semi-maceration carbonique, each lot was pressed and fermentation was completed in stainless steel tanks, followed by two months of sur lie ageing. Fermentation was carried out exclusively with indigenous yeasts, with no additives used at any stage. After sur lie ageing enhanced the texture and complexity of the wine, the components were blended, racked, and bottled immediately. The wine was then aged in bottle for a further six months before release. It was bottled unfiltered and without any added sulphur dioxide (SO₂).

The name “NECO” combines the Italian words Nuova Esperimento (new experiments) and COoperazione (cooperation), along with “neko” (cat in Japanese). Each wine is named after a rescued cat connected to the winery.

“Genchi” was named after a cat found weak and trembling near a convenience store, with the hope that it would grow strong and full of life. This wine reflects that same spirit — bright, energetic, and gently expressive.
