Tasting notes
Aromas of dark cherry, blackberry, violet, clove, and cherry liqueur. Soft tannins and a silky texture are complemented by flavors of plum and blackberry, offering a balanced acidity and an elegant impression. A red wine perfect for unwinding slowly after sunset. Enjoyable for 4 to 5 days after opening.

Food pairing
Roasted duck with berry sauce, grilled pork loin with red or Hatcho miso-based sauces, teriyaki chicken, grilled aubergine with ginger soy sauce, sautéed mushrooms with butter soy sauce or balsamic vinegar, tomato-based pasta dishes, braised meatballs, brie, camembert, and washed-rind cheeses.

Winemaking
The Muscat Bailey A purchased from Nagano was carefully sorted over four days. While checking the condition of the grapes, they mixed hand-de-stemmed grapes with whole bunches for carbonic maceration. After lightly crushing them with feet, fermentation proceeded with wild yeast. After pressing, the wine was aged in old barrels and then bottled. Due to the careful selection of high-quality grapes, the wine was made without added sulphites. The resulting wine has a well-balanced profile of fruit flavors, acidity, aroma, and oak character, with the Muscat Bailey A characteristics perfectly shining through in a gentle and elegant finish. The winemaker, Koki Murayama, was so pleased with the fruity outcome that he ended up drinking an entire case (12 bottles) before release! We highly recommend you try it.

The label was designed by the paper-cut artist Megumi Naoi. "Chabashira" refers to the tea stems that sometimes float to the top when brewing Japanese tea. In Japan, when these stems stand vertically in the teacup, it is called "chabashira ga tatsu (the tea stem is standing)," and it is considered a sign of good luck. This wine expresses the small joys of everyday life and the feeling of being able to empathize with these little moments. It is meant to accompany your daily meals with this sentiment.

Domaine Murayama is located in Tomi, Nagano, which is considered an ideal environment for viticulture. Compared to other regions in Japan, it has very little rainfall and a large temperature difference between day and night. South-facing slopes at an altitude of approximately 600 metres. The winery has 1.2 ha of its own vineyard on a mixture of volcanic soil and strong clay. The winery grows mainly grapes, but also vegetables and rice, manually as much as possible and keeping the vineyards as healthy as possible.
