Tasting notes
Charming and aromatic, with notes of strawberry, melon, watermelon and pomegranate, alongside a delicate hint of violet. The muscat aroma from Shine Muscat adds a lovely accent. Clean and juicy on the palate with bright red berry flavours. Serve well chilled as an apéritif or with light desserts, and best enjoyed on the day it’s opened.

Winemaking
A red wine made from Kyoho, Shine Muscat, and Nagano Purple grapes sourced from growers in Tōmi City. All grapes were de-stemmed and co-fermented in open stainless steel tanks. Using semi-carbonic maceration, the fermentation began naturally with wild yeasts. On the fourth day, the grapes were crushed by foot, followed by daily pigeage until pressing near the end of fermentation. After fermentation, the wine was kept on its lees (sur lie) to enhance depth and bottled after racking. No sulphites were added at any stage, and the wine is bottled unfined and unfiltered. The label was created using generative AI, with the concept themed around a “Sushi Girl.”
