Tasting notes
On pouring, fresh Muscat aromas rise from the glass, accompanied by hints of white flowers and herbs that lend a refreshing lift, along with a subtle touch of butter from oak ageing. A gentle, yoghurt-like acidity and slight viscosity on the palate lead to a smooth, lingering finish.

Winemaking
Made exclusively from organically grown Muscat of Alexandria from Funao, Kurashiki City. Whole bunches were pressed and fermented in stainless steel tanks, then aged with half in enamel tanks and half in oak barrels. The components were blended and bottled in March.

In 2024, disease during the rainy season significantly reduced yields; however, the intense summer heat resulted in higher sugar levels and beautifully ripened fruit. As a new challenge, this year’s wine is crafted in a still style, without fining agents and with no added sulphites.

The name “mellow” is inspired by a citrus-flavoured soft drink enjoyed in childhood — a memory so vivid it has never faded. The name expresses the richness of fully ripened fruit, generous aromatics and sweetness, as well as the hope that those who drink it will feel uplifted and at ease. The label, designed by Art Space Aburakame, features the winemaker’s daughter and conveys the idea of “watching over”. Usually yellow, the label is pink this year to reflect the still style.
