Tasting notes
Aromatic notes of muscat, osmanthus, orange peel, kumquat candy, ginger and apricot. Light on the palate yet complex, with layers of black tea, ginger, Japanese citrus and a savoury dashi-like depth. A gentle bitterness gives definition and balance. Serve well chilled for a crisp, refreshing finish. Best consumed within two days of opening.

Winemaking
Monde Briller is a new grape variety born in Yamanashi in 2014, a cross between Chardonnay and the disease-resistant Cayuga White. It is distinguished by its vibrant muscat-like aroma. The winemaker of Domaine Hide, Hideo Shibutani was captivated by its striking fragrance and planted it in 2019.
The vineyard lies in Minami-Alps City, Yamanashi, at 339 metres above sea level. The vines grow on an alluvial fan of gravelly soil with bedrock appearing within 60 cm, a tough and nutrient-poor environment that ensures natural concentration. No chemical pesticides are used. The 2024 season was hotter than the previous year, but with little rain, producing healthy fruit. As the vines are still young, the grapes ripened early and were harvested on 20 August.
Fermentation was carried out using carbonic maceration with pied de cuve, with whole bunches left intact. After foot-treading, the grapes were macerated with skins and seeds for around three weeks, creating a fragrant and expressive orange wine. No sulphites were added. Only 212 bottles were produced.
