Winemaking
Made from an average age of 26 years Muscat Bailey A grapes grown in the Shimonora vineyard, which consists of fine-grained forest soil with 20% gravel at 350m altitude, in Minami-Alps. With biodynamic methods, they are harvested slightly late on the full moon, crushed by foot and fermented in whole bunches. After 36% of the juice has been extracted (Saignee), the wine was matured for 24 months in new French oak barrels. The temperature was regulated and controlled by air-conditioning in the winery during the day and by putting them out under the stars at night. The result is a gentle taste that allows you to enjoy the flavour of the skins and seeds, while at the same time soaking into your body. This is a natural version of Domaine Hide's flagship wine “Laputa”, which is only produced in the best vintages and with the winemaker's knowledge and strength. If Laputa is an elite of the winery, Laputa Heidi would be a free-spirited girl. As the name suggests, the wine was inspired by “Heidi”, who loves the mountains. The illustration was created by Shinichi Wakasa, an up-and-coming young painter whose work is housed at Engakuji Temple in Kamakura, who drew a phoenix as a reminder to the owner, Mr. Shibutani, who started winemaking in his 50s, to 'keep on making wine forever’. The mountain in the background of the phoenix represents Mt. Kushigata, which rises behind the winery. 1,081 bottles were produced. The wine is very popular in Japan and is so rare that only six bottles are sold in each exclusive distributor. We hope you will enjoy it in Europe.
