Beef steak, aromatic cheeses with a unique flavour, game meat, hamburger steak with demi-glace sauce

Winemaking
Made from Muscat Bailey A grapes grown in “Kami no Hatake (God's vineyard)”, their own vineyard in Minami-Alps, Yamanashi. Why “Kamino Hatake”? Before the winemaker of the domaine, Mr Hideo Shibutani cultivated the land, there were 24 persimmon trees there, 23 of which were dead and only one had miraculously survived. At the base of the tree, there was a Shinto altar, and he started worshipping at some point. This is why it is called “Kamino Hatake”. Grapes grown in the well-drained, stony vineyard were crushed by foot while wearing a sanitary jacket. The grapes were fermented with wild yeasts and then stored in new French oak barrels for eight months. The wine was then bottled on the new moon day. The label was painted by artist Mino Yamamoto from the Moon Series. The moon on the label changes with each vintage.
