Tasting notes
A hint of Dashi, lemon peel, and young pineapple aroma. Citrus freshness, Genmaicha (brown rice tea)-like savouriness and pleasant yuzu-like acidity.

Winemaking
Made from fully ripe Chardonnay grapes grown in Akeno, Kimori City, Yamanashi, which is 700 m above sea level and is considered the sunniest region in Japan. Grape-stomping took place with a sanitary jacket and the grape skins were soaked and naturally fermented for 12 days. Following the forces of nature and the moon, it was bottled on the new moon day, when wishes are said to come true. It was then released two years later when it was ready to drink. No sulphites are added. Unusually for orange wine, it is made from Chardonnay alone. Finding a taste of yuzu in the acidity brings back memories of Japanese nostalgia.
