Tasting notes
Lemon, white peaches and green apples with sweet, gorgeous aromas of pears and confiture. The sweetness and acidity are well balanced and the pure fruitiness lasts from the attack to the finish. This wine is characterised by its freshness derived from its stainless steel tank ageing, but it also has sufficient volume to be drunk with a good sense of alcohol.

Poached cod, scallops carpaccio, grilled white fish, raw oysters, sautéed turnips with garlic, braised leeks with lemon and parsley, oil sardine, goat cheese and olives
Winemaking
GUBI GUBI has imported Chardonnay wines from domaine tetta that have been aged in barrels, but this time a Chardonnay vinified exclusively in stainless steel tanks for both fermentation and maturation has been imported. The use of no barrels has resulted in a wine that is as fresh as if the grapes had just been harvested straight off the vine.
The soil of their own vineyard is limestone, which is rare in Japan. Vinified with 6-11 year-old Chardonnay vines grown on south-west facing slopes at an altitude of 430 metres. Harvesting was timed carefully from late September to early November. Fermentation and ageing in stainless steel tanks without destemming or crushing. Slight sulphites added at bottling.
