Tasting notes
Fresh aromas of honeyed apple, white peach and pear are layered with elderflower, a touch of minerality and a little hint of raw almond. On the palate, generous fruit is balanced by lively acidity, with flavours of yuzu and other Japanese citrus, green apple and a subtle bitterness reminiscent of white grapefruit pith. The finish is clean and refreshing. It can be enjoyed for around three days after opening.

Sea bream or flounder carpaccio, sautéed scallops, pan-fried white fish, grilled pork loin with lemon, white asparagus, tempura of vegetables, young Comté, light Brie, Japanese rolled omelette (dashimaki tamago), grilled fish with sudachi, kombu-cured white fish, goat’s cheese.

Winemaking
ta.to Chardonnay is a white wine that brings together Chardonnay from two different regions within Nagano Prefecture. It is a blend of estate-grown fruit from the Kanou district of Tomi City, combined with purchased Chardonnay grapes from Takayama Village, creating a distinctive “two-origin Nagano blend.” The name “ta.to” comes from the first letters of the two production areas: TAkayama and TOmi.

To highlight the individuality of each site, the Chardonnays from Takayama and Tomi were vinified separately. Takayama fruit contributes fresh, uplifting aromas reminiscent of lemon and honeyed apple, while the Tomi Chardonnay brings greater depth and a warm, rounded acidity. After fermentation with wild yeasts, the two components were carefully blended to enhance the strengths of each.

The 2024 season was shaped by extreme heat in July and heavy rainfall in August, leading to slightly restrained ripeness in both Tomi and Takayama. As a result, it is a vintage marked by higher acidity and a more finely structured profile. After fermentation, the wine was aged for around six months before bottling.

This is a beautifully balanced Chardonnay that captures the character of two contrasting Nagano terroirs in one bottle.
