Tasting notes
Fruity and sweet aroma of muscat, guava, pineapple, yellow peach, syrup and strawberry. Some aromas of golden osmanthus and fruit flavoured tea. The palate is pineapple, honey, mandarin oranges and persimmon. Moderate tannins and a slight effervescence. Best enjoyed with food.
Food pairing
Sushi, udon, simmered beef and tofu in soy sauce and mirin, pork cutlets, spring rolls, sand borer tempura, stir-fried pork with ginger and soy sauce, Chikuzen-ni(simmered chicken and vegetables), simmered taro in sweetened soy sauce, lightly pickled Chinese cabbage. Suitable for a wide range of Japanese dishes.
Winemaking
This orange wine is made from late-harvest, fully ripened Delaware grapes purchased from an agricultural cooperative in Yamagata Prefecture. The grapes were macerated with their skins to create a wine with depth and character. To ensure the naturally sweet aroma of Delaware grapes did not become overpowering, punching down was avoided during fermentation. Instead, gentle techniques were used to carefully extract the wine’s delicate aromas and flavors.
In 2023, Yamagata experienced a harvest approximately two weeks later than the previous year, resulting in grapes with excellent color, low acidity, and a high sugar content of around 22 Brix. Destemming was performed entirely by hand to prevent damage to the fruit. The grapes were left whole and placed directly into the tank without crushing. Punching down to crush the grapes was avoided, relying instead on pumping over during the approximately four-week maceration period. Fermentation was carried out using wild yeast, with the initial phase at ambient temperature, followed by temperature control to keep it below 20°C. After fermentation, the wine was promptly racked off its lees and underwent about six months of tank maturation. Sulphite management during aging was kept to a minimum, and no sulphites were added at bottling.
