Tasting notes
Aromas of juicy, refreshing citrus such as kabosu, lime and hassaku are layered with subtle notes of flint and freshly cut grass. The palate is gentle and clean, with well-defined acidity balancing the vibrant fruit. A delicate bitterness characteristic of Sauvignon Blanc lingers on the finish, while fruit, acidity and savoury umami come together to create a complex yet harmonious profile. Full of flavour without feeling heavy, this is a fresh and highly drinkable white wine. Its delicate, clean character makes it particularly well suited to Japanese cuisine, as well as a wide range of dishes from cold starters to seafood and lighter main courses such as chicken.

Winemaking
Sauvignon 2024 is a white wine made from estate-grown grapes in Tomi, Nagano, with reduced use of agricultural chemicals. The blend consists of 68% Sauvignon Blanc and 32% Sémillon and was vinified at Arc-en-Vigne. In the vineyard, pesticide use is limited to approximately 45% of the level recommended under the regional spraying programme.

The 2024 growing season saw persistent rainfall around harvest, affecting the grapes as they approached full ripeness. Sugar levels also remained lower than in the previous year, with harvest progressing somewhat earlier. Particular attention was therefore given to selection in the vineyard. Fruit was carefully sorted for around two months leading up to harvest, with further selection on picking days to ensure that only healthy, high-quality bunches were brought into the winery. Although the final yield was reduced to approximately half the usual volume, this rigorous selection allowed the best fruit to be used for the wine.

Fermentation took place with indigenous yeasts, followed by maturation in stainless steel tanks. The wine was bottled unfined and unfiltered. Only small amounts of sulphur dioxide were used, at pressing and again at bottling.

The bright acidity and Japanese citrus character of Sauvignon Blanc are complemented by the additional texture and balance brought by Sémillon. Careful fruit selection in 2024 has resulted in a harmonious combination of acidity, fruit, savoury umami, and subtle bitterness, making this a particularly versatile wine at the table.

Only 582 bottles were produced, and this limited cuvée is being released in Europe for the very first time.
