Tasting notes
A charming and elegant red wine with expressive fruit and vibrant acidity. Aromas of strawberry, cassis, ume plum, and cherry rise from the glass, gradually evolving towards violet and plum, with additional nuances of chocolate, herbs, black tea, and minerals. Light and delicate on the palate, yet clearly defined by its bright acidity, the wine gains additional depth and concentration from the mature 2023 cuvée included in the blend. Further bottle ageing should bring greater harmony and allow the Pinot Noir character to become increasingly prominent, developing into a more complex and sensual expression of fruit and aroma.

Roast duck with plum sauce, braised pork with prunes, chicken liver pâté, straw-seared bonito, rare tuna katsu, duck nanban, grilled shiitake mushrooms, simmered beef and burdock with ginger and soy sauce, grilled chicken tsukune with sansho pepper, mushroom and chestnut risotto, roasted beetroot with goat’s cheese, braised lentils with bacon, Taiwanese sausage, braised beef with star anise, aged Comté.
Winemaking
Pino Fan Rouge Z is a Pinot Noir-led red wine from the estate vineyards of Takayama Village, Nagano. Five Pinot Noir clones from what Domaine Hase considers one of its most promising vineyard sites form the core of the wine, complemented by Zweigelt, Syrah, Gamay and other varieties, together with a mature 2023 cuvée incorporating Muscat Bailey A. The vineyards are farmed without chemical pesticides or herbicides, with particular consideration given to preserving the natural vineyard environment and indigenous yeast populations.
The 2024 growing season saw record-breaking heat through July, followed by persistent rainfall and changing sunlight conditions from August onwards. To harvest the fruit at the best possible level of ripeness, picking took place in several stages rather than all at once. Careful selection removed not only affected grapes but also underripe fruit, ultimately reducing the amount available for winemaking to around two-thirds of the original crop.
In pursuit of a pure and elegant style, the grapes were destemmed and underwent several days of cold maceration before spontaneous fermentation with indigenous yeasts. After pressing, the wine was transferred to barrels, where fermentation continued, followed by approximately one year of maturation.
The 2024 cuvée is characterised by floral berry fruit, vibrant acidity and a particularly delicate profile. To add structure and concentration while preserving this character, a mature whole-bunch cuvée made from Muscat Bailey A and other varieties harvested in the hot, dry 2023 vintage was blended in at approximately 25% of the final wine. Bringing together the qualities of the two vintages gives the bright acidity and elegance of 2024 greater depth, fruit concentration and weight.
The “Z” in the wine’s name is a tribute to Zenbei Kawakami, the Japanese viticulturist who created Muscat Bailey A. The wine was bottled unfined and unfiltered, with only 13 ppm of sulphur dioxide added at bottling for stability during distribution.
