Tasting notes
A funky character with sweet and tangy aromas reminiscent of Japanese plum (sumomo), mandarin orange, and strawberry, all layered with a subtle mineral undertone. The initial impression on the palate is fruity, highlighting notes of strawberry and mandarin. It features a crisp acidity, a gentle bitterness like grapefruit peel, and a slightly nutty finish. Upon opening, if the lees are stirred up naturally by the bubbles and the wine appears cloudy, you can enjoy it as is. If the lees remain settled, it is recommended sealing the bottle with an airtight stopper, gently inverting it to mix—this helps redistribute the concentrated flavors at the bottom, enhancing the wine's body and fruit expression. For the best experience, it is recommended to finish the bottle on the same day it is opened.

Winemaking
"Pétillant Rosé" is a sparkling rosé wine nurtured by the terroir of Tomi in Nagano. Since the founding of Domaine Nakajima in 2014, it has been vinified continuously with a dedication to expressing the unique character of the region. Known as a renowned growing area for Kyoho grapes, this wine was born from the desire to fully highlight the personality of Kyoho. Today, the blend centers on Kyoho, complemented by aromatic and flavorful varieties such as Shine Muscat, Pione, Nagano Purple, and Aki Queen, resulting in a wine that offers a distinct expression each vintage.
The 2024 vintage was marked by frequent rainfall, which accentuated the grapes' natural acidity and created a refreshing and light impression. The challenging conditions required extra care in fruit selection, but by working closely with nature and drawing out the grapes' full potential, the winemakers achieved a gentle and delicate profile.
The winemaking of Pétillant Rosé began with the extra step of drying the grapes slightly to concentrate their flavor before fermentation. Any damaged fruit was carefully removed, and the grapes were lightly crushed using a handmade hand-cranked crusher. Further crushing was done manually, wearing rubber boots. The juice was then slowly pressed over half a day to a full day using a manually operated hydraulic basket press. Transferred to a resin tank, spontaneous fermentation began at ambient temperature, continuing for about 10 days. Once fermentation was complete, the wine was immediately bottled, with freshly pressed juice from the same grapes added at this stage. After about a month, the secondary fermentation finished inside the bottle, creating a gentle effervescence from the natural CO₂ produced by the yeast.
By completing fermentation in the bottle and leaving the lees (sediment) intact, the wine achieved both complexity and depth of flavor. No racking was performed, allowing the umami from the lees to remain. With no added sulphites, Pétillant Rosé offers a soft, natural character that is both authentic and charming.
