Tasting notes
A fresh, clean, and pure dry white wine. The aroma is vibrant with notes of grapefruit, lemon, green apple, and pear, accompanied by a subtle hint of ginjo(Sake) aroma. On the palate, it is light and refreshing, featuring gentle acidity and delicate fruit flavors such as green apple and pear. The finish is accented by a pleasant bitterness and astringency reminiscent of herbs and citrus peel. The wine maintains its quality for about three days after opening.
Food pairing
Sushi, sashimi, fresh oyster, pan-seared tilefish (Amadai), braised Japanese udo in soy and mirin (Kinpira-style), potato and cheese galette, grilled Chinese cabbage “steak”, sakura shrimp tempura fritters (Kakiage), rockfish tempura (Kasago), wild mountain greens in light soy broth (Ohitashi), and pasta Genovese (basil pesto).
Winemaking
Noumin Dry is a dry white wine made from grapes grown in cool climates, such as Hokkaido and the high-altitude vineyards of Nagano. The 2023 vintage uses white wine grapes with distinctive aromas and firm acidity, including Müller-Thurgau, Kerner, Bacchus, and Silvaner from Hokkaido, as well as Sauvignon Blanc from Nagano, all carefully cultivated by skilled grape growers.
At the winery, the wine was made using a simple and gentle approach. After destemming, the grapes were gently pressed, and the juice was left to settle overnight at a low temperature. The next day, it was racked and transferred to stainless steel tanks. Fermentation took about a month using wild yeast, with the temperature kept below 22°C to preserve the aroma. This was followed by malolactic fermentation with natural lactic acid bacteria. The wine was aged in stainless steel tanks for about four to five months, then racked, blended, lightly filtered, and bottled.
It is expected to retain its fresh character until around 2027, and gradually develop a more integrated and mature flavor from 2028 onward.
