Tasting notes
Fresh, sweet and sour aroma such as raspberry, liquorice and confiture. Also cinnamon and caramel aromas come from ageing. Dry but the aromatic impression gives a slight sweetness. Gentle acidity and tannins. Long finish with elegant fruitiness.

Food pairing
Simply seasoned beef steak, Ratatouille, Japanese ginger pork (Shogayaki), Yakitori, Okonomiyaki, Tempura, Sushi with meaty fish (Tuna, swordfish and salmon), Bitterballen, goat cheese.

Winemaking
Made from Muscat Bailey A, a variety indigenous to Japan. Grown on south-west-facing slopes on limestone soil at an altitude of 430 metres. The vines are 23 years old, the oldest in their vineyards, and are harvested manually in mid-November. Fermented in stainless steel tanks, destemmed and uncrushed, then matured in French oak barrels for six and half months. The proportion of new oak barrels is 18%. The wine was then bottled and released after approximately three months.

The winery has tried many different styles of wines made from the variety over the past 15 vintages and has released many items. However, with this 2021 vintage, they said they have found their direction. They are now able to express a natural and clean Muscat Bailey A, while eliminating human intervention. This is a Japanese red wine that we would like to recommend to people from all over the world. Limited stock available.
