Tasting notes
A bright, translucent ruby-red wine with aromas of fresh raspberry and cherry, layered with fragrant notes of dark flowers. The palate is smooth and supple, with light tannins supported by subtle nuances of oak and tea.

Cabernet Franc takes the lead, bringing an expressive floral character and an elegant, seamless texture. At just 11% alcohol, the wine remains light and highly drinkable, while the blend of varieties and gentle barrel ageing add depth and complexity.

Food pairing
Roast duck breast, charcoal-grilled pork shoulder, beef tagliata, chicken liver pâté, lamb and herb meatballs, mushroom Bolognese, grilled maitake mushrooms, simmered beef and burdock with ginger and soy sauce, yakitori with tare sauce, Japanese braised pork belly, lu rou fan, stir-fried beef with black pepper, aged Comté.

Winemaking
Mélange Bordelaise 2024 is a red wine made from grapes grown with reduced use of agricultural chemicals in Yone Farm Tomi’s estate vineyard in Tomi, Nagano. Cabernet Franc forms the core of the blend at 52%, complemented by 23% Merlot, 13% Syrah, 7% Cabernet Sauvignon, 4% Petit Verdot and 2% Mourvèdre. Bringing together the individual character of six varieties, it is a distinctive cuvée from Yone Farm Tomi. Pesticide use in the vineyard is limited to 50% of the level recommended under the regional spraying programme.

Vinification takes place at Tsuiji Labo, a winery also located in Tomi that works with local growers to produce small-batch wines that express the individual character of their grapes. The wine was spontaneously fermented with indigenous yeasts in stainless steel tanks, followed by ageing in neutral oak barrels. It was bottled unfined and unfiltered, with only a small amount of sulphur dioxide added at bottling.

The fragrant character and light tannins of Cabernet Franc are complemented by the other varieties, including Merlot, while ageing in neutral oak adds further depth. Rather than the weight and power often associated with Bordeaux blends, this wine combines Bordeaux-inspired complexity with the light, lively drinkability of its lower alcohol style.
Only 289 bottles were produced, making this an exceptionally rare, small-production cuvée from Yone Farm TOMI.
