Tasting notes
A beautifully balanced sweet wine shaped by the character of botrytised fruit. Aromas of lemon and grapefruit intertwine with notes of honey, mint, fennel, and flint. The palate opens with flavours of peach and quince before gradually unfolding into hints of chestnut and sweet potato. Bright acidity provides freshness and balance, while a subtle mineral character reminiscent of seaweed carries through to a long, savoury finish.
Already drinking beautifully, the wine is expected to gain further harmony and complexity with bottle age. It can be enjoyed over the course of a week after opening.
Food pairing
Carrot râpée, simmered conger eel, salmon and cream cheese marinade, steamed chicken breast, simmered daikon with minced meat, kobako crab, hachis Parmentier, shaved ice with white peach and ricotta, kumquat compote, savarin, young Comté cheese.
Winemaking
Kerner Siesta 2022 is a sweet wine made from botrytised Kerner grown by contracted growers in Yoichi, Hokkaido. During the 2022 harvest, noble rot (Botrytis cinerea) developed naturally in the vineyard, and only botrytised fruit was selected for this special cuvée.
The grapes were gently pressed and the juice settled overnight at low temperature before clarification. Fermentation took place in stainless steel tanks at temperatures below 22°C over three to four weeks using indigenous yeasts, followed by malolactic fermentation with native lactic acid bacteria. The wine was then matured in stainless steel tanks for approximately six months before racking, blending, filtration, and bottling.
The richness of botrytised fruit is balanced by the complexity gained through slow fermentation and élevage. With 16.4 g/L of residual sugar, the wine offers a gentle sweetness rather than a fully dessert-like richness. Kerner’s naturally vibrant acidity keeps the palate fresh and lively, creating a harmonious balance between honeyed generosity and bright freshness. Whether enjoyed after a meal or alongside dessert, it is a wine designed to be savoured slowly and unhurriedly.
