Tasting notes
The nose is apple, pear and white peach fruit with hints of honey, yoghurt, mint and flint. On the palate, smooth with pleasant acidity and fruit sweetness, while the bitterness and umami from the lees spread slowly in the mouth.

Food pairing
Dashi-maki egg roll, yellowtail carpaccio, Braised Japanese aubergine, char-grilled shiitake mushrooms, half-dried horse mackerel, deep-fried seafood, fried oysters, asparagus wrapped in bacon, roast pork, stir-fried chicken breast with almonds.

Winemaking
Kaze no Etude (= Etude of the wind) is a dry white wine made from Chardonnay and other grapes grown by COCO FARM & WINERY's contract farmers throughout Japan. The 2021 vintage is blended with 10% Petit Manseng in order to give the Chardonnay a more structured flavour profile. In music, an ‘etude’ is a combination of diverse elements for practising a musical instrument, yet it is attractive and popular with many people. This white wine, made in a winery located in the breezy mountains of Ashikaga, is also named ‘Kaze no Etude’ because it is composed of many elements for a good wine: good soil, the right variety in the right place, the passion of the grower and careful vinification.

Chardonnay and Petit Manseng were each pressed gently in whole bunches and the juice was transferred to stainless steel tanks. After settling on the lees, the clear juice was fermented with wild yeasts at around 20°C for one week. The juice was then transferred to barrels and stainless steel tanks for another 1-3 weeks of fermentation. Malolactic fermentation with wild lactic acid bacteria. Maturation was 80% in wooden barrels and 20% in stainless steel tanks for approximately 6 months. The wine was then racked, blended and bottled unfined and unfiltered. From 2023 to 2027, the wine will continue to be fresh and fruity, and from 2028, it will age to develop a more integrated, savoury and mature character.
