Tasting notes
A vibrant and expressive clairet that combines the freshness of a rosé with the character of a light red wine. Aromas of ripe strawberry, acerola, cassis, cherry, and hints of candy floss rise from the glass. The palate is driven by bright acidity and generous fruit concentration, offering both energy and depth. While light and lively in style, the wine is supported by an underlying richness and complexity. With further bottle ageing, the berry aromas become increasingly elegant and expressive.
Food pairing
Bonito tataki, yakitori (salt), roast pork, pork shabu-shabu, rare tuna katsu, smoked duck, fresh spring rolls, seafood pancake, lu rou fan, charcuterie, pâté de campagne, Comté cheese.
Winemaking
“FUKUIHARA Clairet M.V.” is a special clairet created to express the character of Fukuihara in Takayama Village through the blending of multiple vintages and winemaking approaches. The wine is made from Muscat Bailey A, Chardonnay, Cabernet Franc, Pinot Noir, and other varieties. Red grape varieties account for approximately 60% of the blend, giving it a deeper colour and structure than a typical rosé.
The 2024 Muscat Bailey A, Cabernet Franc, and Pinot Noir underwent carbonic maceration and whole-cluster fermentation, followed by ten months of barrel ageing. These wines were blended with a macerated Chardonnay cuvée from 2022 and a Chardonnay cuvée made from botrytised fruit in 2023, creating additional complexity and balance beyond a single vintage expression.
The 2024 growing season was marked by record-breaking summer heat followed by changing rainfall and sunlight conditions from August onwards. In this wine, the vibrant acidity and bright fruit character of the 2024 vintage are complemented by the depth and complexity of aged and botrytised cuvées, resulting in a wine with both concentration and harmony. For stability during distribution, just under 20 ppm of sulphur dioxide was added at bottling.
