Tasting notes
Toast, flint, grapefruit, yuzu, hassaku and honey aromas with minerality. Clean and acidic, with a sense of concentration on the palate. Mid-palate intensity and complexity will increase by bottle ageing. Before serving, chill the wine thoroughly, e.g. in a refrigerator, and allow the lees to settle.

Winemaking
This petillant makes the most of the characteristics of Chardonnay grapes from the 88 plots of the winery's own vineyard in the Fukuihara district of Takayama Village. (The ‘88’ is named after the number of saplings in the first row on this plot, which happened to be 88). This plot is located on a mountainside at an altitude of around 840 m, making it a very difficult growing environment for the grapes, which are often damaged by insects and animals before harvest. However, it is well drained and well-ventilated, and the high altitude allows for high acidity and concentrated grapes to be harvested.
After pressing Chardonnay grown in 88 plots and a small amount of Chardonnay grown by Yoshizawa, who also grows grapes in Fukuihara area (also with a small amount of Pinot Gris, Pinot Blanc and Pinot Noir from the winery’s own vineyard), the wine was barrel fermented in large 500L barrels. To keep the amount of lees low, the wine was fermented once and allowed to settle before a second fermentation. This vintage was experimentally secondary fermented with chaptalization to make the bubbles finer and cleaner, but usually the same varietal juice is added.
The FUKUIHARA series is made exclusively from their own grapes, and grapes from neighbouring contract growers in the same Fukuihara area. The wines strongly reflect the terroir of the region. The series is produced with the image of wine to be drunk casually with everyday meals, and the labels have a pop design. The environment of the Fukuihara area and the winery is represented: a nature surrounded by mountains and with a very beautiful starry sky at night. The pheasant depicted in the centre is frequently seen in the area. It is a lovely bird with comical movements and calls, but it eats grapes. In this label, the pheasant symbolises nature and how the winery family is swayed by the harsh nature.
