Tasting notes
Brown cane sugar, clove, vanilla, black fruits aroma such as ripe blueberry or blackberry. Wild, fresh but gentle and smooth tannins on the palate. Long finish. Addictive. Can be drunk without food.

Simply cooked red meat, Korean style spicy deep fried chicken, Xiaolongbao (Chinese soup dumpling), salami, black olive, Kaki no Tane (Japanese rice cracker with peanuts), fried aubergine with Chinese chilli bean sauce
Winemaking
Made from Yama Sauvignon, a red wine grape variety indigenous to Japan. The grapes were fermented in whole bunches for two weeks, pressed and then fermentation continued in stainless steel tanks. The wine was matured in French oak for 8 months. Enjoy the changes in flavour as the temperature rises from around 16°C.
Yama Sauvignon is a hybrid between Yamabudou (wild grapes indigenous to Japan) and Cabernet Sauvignon. It combines the advantages of Cabernet Sauvignon, a European wine grape variety that is not easy to grow in Japan, with the added advantages of ease of cultivation in Japanese climate and conditions, and resistance to pests and diseases.
