Tasting notes
Aromas of green apple, Muscat, mangosteen, white peach and honeyed lemon create an expressive, aromatic profile. Fine, gentle bubbles carry notes of bread dough and fresh Muscat, giving a soft, smooth mouthfeel. The palate opens with sharp acidity, gradually unfolding into savoury depth and flavours of citrus and green apple, with a firm structure shaped by a slight bitterness reminiscent of hassaku. A delicate chamomile-like floral note lingers on the finish. Best served well chilled.

Food pairing
Sea bream carpaccio, scallop and green apple salad, charcuterie, pan-seared sea bass with lemon butter sauce, fried white fish, salt-grilled ayu (sweetfish), goat’s cheese, blanched pike conger with plum sauce, Japanese rolled omelette (dashimaki tamago), fresh oysters, tempura, chilled pork shabu-shabu, lemon-sautéed chicken breast, herb-roasted chicken, fish dishes with fennel or dill, mackerel escabeche.

Winemaking
Chardonnay Perlant 2024 is a gently pétillant white wine made primarily from Chardonnay vines aged 7–9 years, blended with Gewürztraminer and five other varieties. This marks the fourth vintage of Chardonnay Perlant produced by domaine tetta.They told that in previous years they struggled with challenges such as instability from making the wine without added sulphites, as well as reductive notes influenced by lees—constraints that came from sticking too closely to fixed ideas. With this vintage, however, they feel they have finally broken through.

By gradually shifting their mindset towards a more flexible approach, a number of key elements came together to shape the 2024 release: the use of a very small amount of sulphites, field blends and co-fermentation, maceration, and disgorgement to remove lees. The result is a Chardonnay Perlant that represents a clear step forward for the winery.

Harvest took place from early to mid-September 2024. The grapes were destemmed but not crushed, and fermented in stainless steel tanks using wild yeasts. The wine was bottled on 18 October 2024, then aged in bottle. No sugar or acid was added, and only 15 ppm of sulphites was used. A 75-micron filter was applied at bottling.
