Tasting notes
Aromas of flint, apple, quince, apricot, brioche, butterscotch. Lemon flavour on the attack, followed by fruitiness and oaky notes, with a thick, smooth texture. The softness is supported by a firm acidity. Long butterscotch and cream on the aftertaste.

Winemaking
Made from Chardonnay grown in the winery’s own vineyards in the Kano area of Tomi, Nagano. After only healthy grapes were harvested, the grapes were cooled overnight and pressed in whole bunches. The juice was transferred to barrels and fermented with wild yeasts. The wine was then matured in barrels for 10 months. During maturation, the wine underwent a long, gentle malolactic fermentation. Barrels used ranged from new to five years old. After maturation, the wine was blended for balance and bottled unfiltered and released after 12 months of ageing in bottle.
The climate in Tomi in 2021 was characterised by an unprecedentedly cool summer. There were concerns about the effect on the grapes, but the autumn was blessed with long periods of sunny weather, which resulted in a very good harvest, especially for Chardonnay and other white grape varieties. The wines have a full fruitiness, oaky aroma and a thick, smooth texture. The softness of the wine is supported by a firm acidity. This is a wine that can be enjoyed immediately, but also has good potential for further development.
