Tasting notes
Green apple, honey-pickled lemon, wax, white mould cheese, Yakult (Japanese fermented milk drink), modest acidity, fruity and mineral finish. As the temperature rises, the sweet and oaky aroma is enhanced.

Chardonnay from four plots of vines of varying ages and tailoring methods. The grapes were carefully harvested in the best time to age in barrels and selected. Merlot and Pinot Noir were also pressed together in whole bunches. After debourbage, fermented with wild yeasts without temperature control. Matured in old oak barrels for 18 months. Before bottling, 15 ppm sulphite was added and the wine was filtered through a coarse filter (75µ). No added sugar, acid or fining.
