Tasting notes
Berries, flowers, some herbal flavours such as purple shiso leaf. Refreshing acidity and slight lactic nuance. Recommended to drink well chilled.

Winemaking
The latest 2022 vintage of A-danza Frizzante has arrived. The 2022 vintage was affected by a stagnant rainy season front on the Pacific side of Hokkaido, which resulted in 80% of normal sunshine hours in July. Nevertheless, fine weather in September before the harvest allowed for a slight recovery. No pesticides or chemical fertilisers are used in the viticulture at Aizawa Nouen. The main variety of this wine, Kiyomai is a Japanese variety that took over the main features of the Japanese indigenous variety Yamabudou with refreshing acidity. The other variety, Yamasachi, which was developed by crossing an indigenous Japanese variety called Kiyomi with Yamabudou, is registered as an international variety with the OIV (International Organisation of Vine and Wine). After pressing the grapes with whole bunches, fermented with wild yeasts at a temperature between 17-21°C for 50 days. Later added with the juice which was kept when the grapes were pressed, bottled unfiltered and second fermentation in bottle.
