Tasting notes
Aroma of guava, passion fruit, lychee, green apple, dill and lemongrass. Soft palate with gunflint and mineral nuances. Fresh citrusy fruitiness, crisp acidity. Pleasant bitterness in aftertaste.

Chicken breast inner fillet and coriander salad, Caprese of peach and dry-cured ham, char-grilled squid legs, grilled Pacific saury, Japanese Mille-Feuille hot pot, stir-fried prawns and green peppers with fish sauce, pasta with salsiccia, turnip potage

Winemaking
Sauvignon Blanc, Gewurztraminer and Chardonnay from Yoichi, Hokkaido, were used and vinified in two ways. The first method was to press the whole bunches of grapes and leave the juice at a low temperature overnight, it was racked on the following day and transferred to stainless steel tanks where it was fermented with wild yeasts for approximately three weeks at around 20°C. The second method was to place the destemmed grapes in tanks for overnight skin contact and then press gently. Some of the varieties were vinified together. After fermentation, the wine was matured in stainless steel tanks for approximately six months. The wine was then racked, blended and bottled unfiltered and unfined.

“COCOROMI series” (“Kokoromi” = experiment in Japanese) is a name for their challenge. Although those varieties are all suited to Hokkaido's cool climate, it took courage to start making new wine with these varieties, which are still rarely grown in Yoichi. Thanks to veteran farmer Mr Fujisawa and other enthusiastic farmers, "Kumo no Jikan 2022" was made. The vines, including the Sauvignon Blanc, are still young. And they think that although they are not yet experienced enough in winemaking with these grapes, they see great potential in them and their wines. The name of the wine was inspired by the words "Free time watching the clouds" from Sakutaro Hagiwara's prose "Song of Emptiness".
