Tasting notes
A slight reductive note opens the nose, followed by aromas of white grape skin, sudachi and white peach. A chalky mineral note and a subtle sulphurous nuance add depth. Further layers of Muscat candy, pear, ripe green apple, a hint of yoghurt from fermentation and delicate white flowers emerge with time. On the palate, flavours of lemon, Muscat and white peach unfold with rounded acidity that gives a smooth, balanced impression. The finish is long and persistent. Best served well chilled.

Kombu-cured sea bream, boiled dumplings, fresh oysters, scallop carpaccio, octopus marinated with lemon, rare cheesecake, Nanban-style marinated white fish, tempura (mountain vegetables, whiting, prawn), chrysanthemum greens or watercress dressed in tofu (shira-ae), chicken breast with ume and shiso, nukazuke and lightly pickled vegetables, goat’s cheese, fresh spring rolls, yum woon sen (Thai glass noodle salad), coriander salad, oysters.

Winemaking
Takizawa Winery is a family-run estate located in Mikasa, Hokkaido. While centred on cultivating grapes in its own vineyards, the winery also works with carefully selected fruit, primarily from Yoichi in Hokkaido. Embracing the character of the region’s cool climate, Takizawa crafts wines of purity and finesse. With a focus on varieties such as Pinot Noir and Chardonnay, the estate produces small-lot wines that express their terroir and are highly regarded by wine enthusiasts and restaurants both within and beyond Hokkaido.

Niagara 2024 sans soufre ajouté is made from Delaware grapes grown in Yoichi, Hokkaido, a region renowned for wine grape cultivation. The grapes are pressed as whole bunches, and the winemaking approach is deliberately simple: the fermentation is carefully overseen to allow the yeasts to work naturally and without interference. Fermentation is allowed to continue until the yeasts have consumed all available sugars. At bottling, granulated sugar is added to initiate secondary fermentation in the bottle.

The 2024 vintage initially raised concerns, as the recent run of hot summers suggested it might prove challenging. However, the autumn brought low rainfall and a marked drop in night-time temperatures, creating ideal ripening conditions. The result is an exceptional vintage — one unlike any previously experienced.
