Tasting notes
The nose opens with a reductive nuance, followed by layers of black tea, pineapple, mango and honeyed ginger, lifted by a touch of white pepper. Further aromas of mandarin peel, kumquat and sandalwood add depth, with a subtle hint of white pepper and tea-like complexity. On the palate, mandarin and iyokan citrus take the lead, joined by a gentle floral note reminiscent of lily. Fine tannins and moderate acidity are well balanced, accompanied by a pleasant bitterness. The finish is long, with lingering mandarin tones and a structured, lightly tannic grip. It is best enjoyed within three days of opening.
Food pairing
Sanshō-grilled duck, salt-grilled yakitori, ginger pork (shōgayaki), dim sum, larb gai, vegetable tempura, chikuwa seaweed fritters (isobe-age), scallop carpaccio, kombu-cured white fish, nukazuke (rice-bran pickles), fresh spring rolls, bánh mì, Hainanese chicken rice.
Winemaking
Takizawa Winery is a family-run estate located in Mikasa, Hokkaido. While centred on cultivating grapes in its own vineyards, the winery also works with carefully selected fruit, primarily from Yoichi in Hokkaido. Embracing the character of the region’s cool climate, Takizawa crafts wines of purity and finesse. With a focus on varieties such as Pinot Noir and Chardonnay, the estate produces small-lot wines that express their terroir and are highly regarded by wine enthusiasts and restaurants both within and beyond Hokkaido.
Delaware Orange 2024 is made from Delaware grapes grown in Yoichi, an area renowned for wine grape cultivation. After meticulous hand-sorting, the grapes are destemmed and crushed, followed by five days of skin contact to draw out texture and colour. The wine is then matured in stainless steel tanks. Throughout the process, great care is taken to maintain the wine’s condition prior to bottling.
Although the 2024 vintage initially gave rise to concerns due to the continued summer heat of recent years, the season ultimately brought little rainfall in autumn and a marked drop in night-time temperatures. These favourable conditions resulted in an outstanding vintage—one of the finest the estate has ever experienced.
