Tasting notes
Red berries, star anise, raspberries and a hint of caramel. The juiciness is reminiscent of Pinot Noir from Alsace. Flavours of toffee, cacao and dried herbs. The dashi-like flavour is pronounced immediately after corking, but from around the second day, the aromas develop and the umami flavour is more pronounced. (as of September 2024) 

Food pairing
Sushi (tuna, toro, eel, etc.), sukiyaki, dishes with mushrooms, cheese and cream, smoked tofu with wasabi. Also goes well with salty foods such as cured ham.

Winemaking
Pinot Noir grown in the winery's own vineyard in the Kano area of Tomi, Nagano. The vineyard is characterised by its south-west facing slope, firm sunshine and clay soil. Healthy, ripe Pinot Noir was placed in tanks with whole bunches and underwent carbonic maceration for about two weeks. After pressing, main fermentation in barrels, followed by one year of barrel ageing before bottling.

In 2021, Tomi was characterised by a cool summer and a long, sunny autumn. The harvest was slightly early to avoid diseased grapes, as healthy bunches are necessary to prepare the wine for carbonic maceration. The result is a lighter wine with a charming aroma that retains a moderate acidity. Only 100 bottles were produced.
