Tasting notes
Elements of apricot, ramune soda drink and banana, with a fresh, jasmine-like aroma. The palate is rich, followed by a pleasant citrus aftertaste with a pleasant citrus bitterness.

Winemaking
A new vintage of Daidai-iro, which was popular last year, has arrived! Again, fully ripe Delaware from the Okitama region of Yamagata were used. 2023 was a very hot year, resulting in considerably higher sugar content than in previous years, but with lower acidity. The lack of a significant temperature difference between day and night meant that the colouring did not develop as much even when fully ripe.
‘Daidai-iro’ is produced every year, and the most important thing when vinifying it is its gorgeous aroma and pleasant, long-lasting finish. This year again, the necessary elements in the aroma have been achieved using the carbonic maceration. As they felt that the grapes were riper than in previous years and that there was more character to be extracted from the skins, they tried carbonic maceration, fermentation in closed tanks for 14 days with the whole bunch, followed by pressing and another 14 days of fermentation in stainless steel tanks. The most important part of the aftertaste is blending with a skin contact orange wine, which was vinified separately from this. The grapes were destemmed and crushed, then fermented in open tanks for 18-20 days. These two types of orange were blended before bottling to achieve balance. The colouring of the grapes did not progress very far, so the colour is subdued, which is typical of this vintage.
