Tasting notes
Aroma of stone fruit such as yellow peach and apricot as well as compote and honey. Also some botanical scent reminiscent of gin and absinthe makes the wine unique. Sweetness on the palate derived from noble rot. Gentle acidity. Tannin and alcohol provide the structure. Intense aroma and flavour with ripe fruit and Shaoxing Jiu (Chinese alcohol) -like long aftertaste.
Food pairing
Goes well with Asian food. Hui guo rou (Twice-cooked pork), spare ribs, chicken biryani, Japanese ginger pork (Shogayaki), Peking duck, Bak kut teh, Japanese-style grilled eel, Japanese braised pork belly, etc.
Winemaking
Made from 5-12 year old Pinot Gris vines planted on south-west facing slopes at 400 metres altitude on limestone soil, harvested by hand in late October. The destemmed grapes were placed in stainless steel tanks for fermentation without crushing and macerated for 18 days. Punching down three times a day during the fermentation. Maturation in stainless steel tanks for 7 months. Only 15 ppm sulphite added at bottling. Limited production of only 316 bottles.
This is the third vintage that domaine tetta has produced varietal wines from Pinot Gris. They have been working with this variety with great admiration and respect for the great producers of Friuli in northern Italy. For the 2022 vintage, they delayed the harvest to the limit and achieved the highest sugar levels ever. The wine is completely different from the Pinot Gris of the past two years, as it was made mainly from noble rot and ripe rot bunches. They believe it has the potential to age for a long time.
