Tasting notes
White peach aroma, Japanese citrus, richness of pear, citrus peel bitterness, fresh and herbal finish. Powerful fruitiness.

Winemaking
Made mainly from Sauvignon Blanc and other varieties of Riesling and Chardonnay grown in the winery's own vineyards in the Kano area of Tomi, Nagano. Sauvignon Blanc was macerated for about two weeks. Fermentation tanks were stainless steel tanks and barrels. Several lots were blended and bottled unfiltered.

The climate in Tomi in 2021 was characterised by an unprecedentedly cool summer. There were concerns about the effect on the grapes, but the autumn was blessed with long periods of sunny weather, which resulted in a very good harvest for white grape varieties. GRASSHOPPER is a cuvée created in search of new ways to enjoy Sauvignon Blanc. Enjoy its unique herbal aroma.
