Tasting notes
A fresh white wine with a wide range of fruit aromas, including melon, golden kiwi, green apple, peach nectar, and apricot. While the drying process brings a gentle fruit sweetness, the early harvest preserves a bright acidity and a subtle bitterness that adds structure to the palate. Light and easy-drinking, with a delicate spritz on the tip of the tongue that adds a fine accent, leading to a clean and pleasant finish. Best consumed within a few days after opening.

Korean seafood pancake (haemul pajeon), Taiwanese-style omelette, boiled dumplings with spring onion oil, gai yang, khao man gai, prawn and citrus marinade, white fish carpaccio, octopus and celery marinade, ceviche, salted squid and buttered potatoes, pizza with whitebait and shiso, grilled edamame, corn fritters, smoked daikon and cream cheese, horse mackerel namerō, mackerel sandwich, oil sardines, courgette fritters.
Winemaking
Table Wine Blanc 2025 is made from Delaware grapes sourced from Yamagata. While previous vintages were released as a pétillant, this year it is crafted as a still wine with only a slight natural spritz.
The grapes were harvested slightly earlier to retain acidity, then dried in the shade for 1 to 4 weeks. After destemming and gentle foot crushing, they were pressed using a vertical basket press and fermented in resin tanks with indigenous yeasts.
After primary fermentation, the wine was bottled during malolactic fermentation, leaving a delicate, fine spritz on the palate. No additives were used. To create a fresher and more balanced profile, the harvest sugar level was intentionally kept lower than in previous years, resulting in brighter aromatics such as green apple and peach rather than overt sweetness.
The label features a crayon drawing of grapes by the winemaker’s daughter, adding a personal and warm touch to the wine.
