Tasting notes
Muscat, lychee, guava, pear, white peach compote, honey and vegetal herbal aromas. Slight sweetness, good balance between acidity and bitter tannins. Very long finish, with nectar-like thick fruitiness. Aromatic nose with a rounded taste and alcohol that gives it a Daiginjo-like flavour.

Sashimi, sushi, chopped horse mackerel with miso, miso marinated cheese, salted fermented squid (ika shiokara), grilled chicken marinated in Saikyo miso, cream pasta, Camembert, spicy Indian dishes

Winemaking
Shine Muscat is a premium table grape variety highly popular both in Japan and internationally. At domaine tetta, winemaking with Shine Muscat began in earnest with the 2022 vintage. The winery has been exploring ways to highlight the grape’s signature muscat aroma while compensating for its naturally low acidity and light body by carefully controlling volatile acidity.  For the 2023 vintage, Sauvignon Blanc, Riesling, and Chenin Blanc were blended to achieve overall balance. 

domaine tetta's vineyard is uniquely situated on limestone-rich soil, rare in Japan. The vines are grown on a southwest-facing slope at an altitude of 430 meters and harvested in early October. Fermentation took place in stainless steel tanks, followed by eight months of aging in neutral oak barrels. This barrel aging process resulted in a wine distinct from previous vintages. A minimal amount of sulfur was added at bottling.
