Tasting notes
Pomegranate, strawberry, milk candy, acerola, rose, with subtle hints of cinnamon and banana. A light and vibrant attack on the palate. The wine bursts with red fruits and a herbal touch reminiscent of red shiso. Its refreshing acidity and acerola-like finish make it an easy-to-drink, lively wine. Perfectly enjoyable on its own. Serve well-chilled for picnics or aperitifs.
Food pairing
Cucumber and wakame seaweed vinegar salad, pickled cherry tomatoes, summer vegetables marinated in dashi and soy sauce, citrus-infused salad, Pad Krapow Gai (spicy Thai basil chicken), Indian curry, Nyonya achar (Indian vegetable pickles).
Winemaking
Aizawa Farm has been delivering unique, high-quality wines from Japan's northernmost island, Hokkaido, since GUBI GUBI's inception. 2023 vintage sees the arrival of the well-known ‘Ryunosuke’ and ‘A-danza Frizzante’, as well as a rosé made from the OIV (International Organisation for Grape and Wine) registered international variety, Yamasachi. In 2023, there was a cold snap in mid-May, and late frosts significantly reduced the harvest. However, after that, sunny days and temperatures above 35°C resulted in a very good grape harvest.
The organic, pesticide-free Yamasachi grapes were vinified in whole bunches for 10 days in carbonic maceration. It was then pressed and continued fermentation with wild yeasts in stainless steel tanks. Maturation was for 5 months in old oak barrels. Bottled unfiltered and unfined.
Yamasachi was developed by crossing an indigenous Japanese variety called Kiyomi, which was developed based on the French variety Seibel 13053 (Cascade), with Yamabudou, the indigenous Japanese mountain grape. The innovative crossing of mountain grapes with wine grape varieties has made it so cold-resistant that it can be grown in regions with temperatures of over -30°C.
