Tasting notes
A light and refreshing Pinot Noir with a delicate structure. Aromas of ripe grape skins and red berries unfold gently, leading to a smooth and easy-drinking palate. On opening, the wine appears light and subtle, but over the course of 2–3 days, the fruit and aromatic depth gradually emerge, revealing a more expressive character.

Food pairing
Roast chicken, pork dishes, mushroom dishes, grilled vegetables, yakitori (tare), lightly seasoned dishes.

Winemaking
This wine is made from estate-grown Pinot Noir in the Kano district of Tomi City, Nagano. The grapes were harvested slightly earlier than usual, resulting in a lighter style.

Fermentation was carried out with indigenous yeasts in stainless steel and oak vessels, with relatively firm pigeage to extract structure. After approximately six months of barrel aging, the wine was bottled in April 2025 without fining or filtration, with only a small amount of sulphites added. It was then aged in bottles for about one year before release. With a total production of only 469 bottles, this is an extremely limited wine.

The result is a wine that evolves with time after opening — initially light and restrained, gradually gaining aromatic intensity and fruit expression over several days.
