Tasting notes
Aroma reminiscent of crisp acidity, featuring green apple and kabosu. Also a hint of sweetness of pear and apricot as well as toast. The palate is dry with a bright, clean acidity and a slight citrus-like bitterness from the grape skins. There is also a subtle hint of sake-like character. Best enjoyed well-chilled on a hot summer day or after sports.

Food pairing
White fish carpaccio, nuts, prosciutto and arugula salad, Comté, Parmigiano-Reggiano, chilled tofu with shirasu and shiso, grilled edamame with salt, smoked salmon and cream cheese appetizer.

Winemaking
Domaine tetta has entered its fourth vintage of producing varietal wine from Pinot Gris. The Pinot Gris 2022, imported in 2024, was characterized as a robust orange wine. However, for the 2023 vintage, they have taken on a new challenge by making a pétillant. While they have always recognized the excellent compatibility between Pinot Gris and tetta’s terroir, they opted for a pétillant to highlight the wine’s freshness, considering the relative youth of the vines.  

The harvest took place in early September, slightly earlier than usual. The 2023 vintage was affected by pests, resulting in a higher number of diseased grapes. To prevent the spread of disease, the grapes were harvested early, leading to high acidity, which was utilized to produce a pétillant.

The grapes were hand-harvested and carefully sorted. Some were directly pressed, while the rest were destemmed and underwent a two-week maceration. During this period, punching down was performed three times a day. The grapes were pressed midway through fermentation and blended with the directly pressed portion to continue fermentation.

Before fermentation was fully completed, the wine was bottled with the addition of only 15 ppm of sulphites. After six months of bottle aging, the sediment was settled, and dégorgement was performed before release.
