Tasting notes
The aroma is complex and reminiscent of well-ripened grapes, with notes of quince, pear, stone fruits, and a touch of honey. On the palate, it offers a clear, vibrant acidity alongside ripe fruit flavours such as quince, apricot and lemon, with salty and umami elements that add depth. Toward the finish, toasty notes from aging emerge, leading to a long-lasting aftertaste. Enjoyable for 4 to 5 days after opening.

Winemaking
‘COCO TOARU series’ is a series of wines made by Bruce Gutlove, winemaker of 10R (‘TOARU’ in Japanese reading) Winery in Iwamizawa, Hokkaido and director of COCO FARM & WINERY, from grapes in Hokkaido with natural flavours of the right variety in the right place. The wines are vinified at the 10R Winery.
The whole bunches were pressed, and the juice was allowed to settle at cellar temperature for 12 hours. It was then transferred to small stainless steel barrels and large 500L French oak barrels, where it underwent fermentation with wild yeasts at an average cellar temperature of 17°C. After fermentation, the wine was aged on the lees for eight months, during which natural malolactic fermentation also took place. Following racking, a small amount of sulphites was added before bottling without filtration.
The year 2021 was highly atypical for grape growers in Hokkaido. An unusually hot summer persisted from early July through September, with temperatures at times exceeding 35°C. During this intense heat, there was also very little rainfall, resulting in near-drought conditions during the latter part of the growing season. High sugar content and correspondingly high alcohol levels characterize this vintage. They first made wine from Pinot Gris in 2014, and 2021 marks our eighth vintage.
