Tasting notes
A lively and aromatic white wine with a gentle pétillant character. Tropical aromas reminiscent of peach nectar, pear, white peach compote, passion fruit, and pineapple unfold from the glass. Despite its expressive aromatics, the palate is dry, with soft acidity and a subtle bitterness bringing balance and definition. Hints of Japanese citrus and savoury umami add further complexity, while the fine bubbles give the wine a light and refreshing texture. Slightly cloudy in appearance, with a soft mouthfeel and an easy-drinking, fresh finish. The wine can be enjoyed over several days after opening.
Food pairing
Tempura, grilled aubergine, cold pork shabu-shabu with yuzu koshō sauce, peach and burrata salad, fresh goat’s cheese, lemon herb chicken, white fish carpaccio, steamed prawn dumplings, ceviche, coconut curry.
Winemaking
Perlant Blanc is an experimental cuvée from domaine tetta, exploring new possibilities for table grape varieties. It is produced in Okayama, where the vineyards are planted on limestone-rich soils known for contributing natural acidity and mineral expression.
Aki Queen, a variety often used for rosé, is direct-pressed to limit colour extraction while preserving aromatic purity, resulting in a white wine with a clear and delicate profile.
Fermentation is carried out with indigenous yeasts without chaptalization or acid adjustment. The wine is vinified in stainless steel tanks, with a small amount of sulphites added for stability. It is lightly filtered while retaining a slight cloudiness and a gentle pétillant character.
Originally conceived as a trial to create a new cuvée, this wine has the potential to become a defining expression of domaine tetta.
