Tasting notes
A fresh and fruity pétillant with fine bubbles and a gentle cloudiness from the lees. Aromas of peach and pear are complemented by notes of yeast and bread, along with a refreshing hint of citrus peel. The palate shows rounded acidity and ripe citrus and yellow fruit, lifted by delicate bubbles that create a light and easy-drinking impression. The finish carries umami from the lees with a subtle bitterness. A light and versatile wine that pairs easily with Japanese cuisine. Thorough chilling in the refrigerator while keeping the bottle upright is recommended before opening.

Food pairing
Marinated fresh mushrooms with citrus, salmon and rapeseed terrine, pizza, sandwiches, hamburger steak, fried chicken, bamboo shoots with wakame, charcoal-grilled shiitake mushrooms, grilled yamame, firefly squid with vinegared miso, and ginger pork.

Winemaking
OUR COCO PETILLANT 2024 is made from grapes grown in Camino Vineyard in Kaminoyama, Yamagata. The grapes were hand-harvested in multiple passes and gently pressed after destemming. After settling overnight at low temperature, the juice was transferred to stainless steel tanks and fermented with indigenous yeasts for about three weeks at around 20°C.

Fermentation was stopped by cooling while a moderate level of residual sugar remained, and the wine was bottled after racking without fining or filtration. The wine retains natural lees and fine bubbles, resulting from ongoing fermentation in the bottle.

This wine is made in the style of méthode ancestrale, a traditional technique for producing lightly sparkling wines.
