Tasting notes
Aromas of mandarin oranges, pineapple, persimmons, yellow peaches, quince, apple-like fruits, honey and a hint of yoghurt. The palate has a clean mouthfeel with good acidity and minerality. The aromas are sweet, but the wine is easy to drink with a dry, Hassaku(Japanese citrus)-like flavour. Enjoy it well chilled.

Yakiniku, sashimi, sushi, smoked salmon marinade salad, raw oysters with mignonette sauce, marinated eggplant (Nanbanzuke), karaage, crispy fried prawns
Winemaking
This wine was vinified from Koshu grapes grown in a vineyard managed by President Shiraishi of Iwasaki Brewing, an long-established winery in Katsunuma, Yamanashi Prefecture—a renowned region for Japanese wine. It also includes Delaware grapes cultivated in Kitani Wine’s own vineyards. The Koshu was pressed 60% and vinified as white wine, while the Delaware was pressed 60% with whole bunches, with the remaining skins collected and macerated to make an orange wine. The final product is a blend of the white wine and the orange wine.
Kitani Wine began producing Koshu wines in 2023. Winemaker Kazuto Kitani expressed that through making this wine, he gained a deeper appreciation for why Koshu has been cherished as a winemaking grape in Japan for so many years.
