Tasting notes
Quince, Muscat, white flowers, ripe apricot, lemon, and yogurt aromas. A herbal and citrusy taste with a subtle hint of tannins. A wine with volume and depth, offering a satisfying drinking experience and a long finish. Recommend uncorking the bottle 30 minutes before drinking.

Winemaking
This orange wine is primarily made from Sauvignon Blanc grown in the Kano district of Tomi City, Nagano Prefecture, with a small addition of Chardonnay. In 2023, extreme heat exceeding 30°C continued before the rainy season in June, with little rainfall. While disease pressure was low, high nighttime temperatures caused acidity to drop quickly, leading to an early harvest. All grapes were harvested by hand. After sorting in the vineyard, the grapes were transported to the winery, where they underwent about a week of maceration in stainless steel tanks before being pressed, initiating fermentation with wild yeasts. After fermentation, the wine was aged in tanks for 10 months before racking and bottling. It is unfiltered, with no fining agents used, and no chaptalization or acid adjustments. A small amount of sulphites was added at bottling.
