Tasting notes
Rich fruitiness on the nose with ripe strawberry, blackcurrant, acerola, cherry, violet, cotton candy, and rosehip tea-like aroma. White varietal characters are also present on the base, with iyokan (Japanese citrus), quince, apricot and a firm minerality. A little tannin and hint of vanilla come through in the aftertaste. With bottle ageing, the wine is expected to become an elegant wine with a lightness, but with a predominantly red varietal character. Wine can be enjoyed on its own.

Food pairing
Marinated salmon, tomato pasta, burrata and fruit salad, black olives, charcuterie, Camembert cheese, caprese, margherita, deep-fried dishes, grilled vegetables, grilled chicken wings with salted malt, dishes with Asian sauces and spices such as gochujang, yuzu pepper, wasabi and hot chilli

Winemaking
This wine has a higher proportion of black grape varieties from their own vineyards than the FUKUIHARA rosē, which we imported in 2023. The cuvées from several vintages were blended for the wine's finish (M.V. stands for Multi-Vintage). Chardonnay from Yoshizawa, a young grower who opened a vineyard in Fukuihara, where the winery is located, at the same time as them, and Muscat Bailey A, Zweigelt and Pinot Noir from their own vineyard were used to make the wine.

  • Chardonnay: a cuvée of 2023 aged in oxygen-permeable plastic tanks, a cuvée of 2022 shade-dried and matured in stainless steel tanks, and a cuvée of 2022 vinified with maceration and matured in stainless steel tanks.
  • Muscat Bailey A, Zweigelt and others: cuvées aged in barrels (8 months) from the 2023 vintage.
  • Pinot Noir: cuvée from 2023, fermented and matured in oxygen-permeable plastic tanks.
The proportion of own grapes (black grape varieties, organic grapes) was approximately 30%.

Domaine Hase is located in the Fukuihara area of Takayama village in the northern part of Nagano prefecture, in a spectacular landscape at an altitude of 800 m with a view of the Hokushin Five Mountains, and has a vineyard of about 6 ha. In 2023, due to record-breaking heat and almost no rainfall from July to September, their own Muscat Bailey A and Zweigelt were harvested in riper conditions than ever before. Chardonnay was also harvested in good weather conditions, resulting in wines with a good balance of sugar and acidity.
