Tasting notes
Aromas of apricot, kumquat, Japanese citrus, fig, orchid, and marzipan. The palate features tea-like tannins and juicy acidity reminiscent of oranges, with a clean and savory umami. A smooth and easy-drinking orange wine. Start chilled and gradually let the temperature rise to enjoy the changing flavors.

Winemaking
FUJIMARU's flagship wine, made from Delaware grapes grown with great care in its own vineyards in Kashiwara, Osaka, and matured in Qvevri. The soil is brown forest soil with clay, with an average altitude of 250m and many of the vines are over 30 years old. Deliberately higher yields due to the need to pick some of the grapes early (used for different wines) influenced the vintage, resulting in a soft, tasty, smooth orange wine.
After destemming and crushing, the cap was punched down once or twice daily in open resin tanks, vigorously and thoroughly oxygenated. Delaware is a grape variety with low tannin content on the skins, so even with vigorous punching down, it is able to maximise flavour without being too astringent. 15 days of maceration. After the main fermentation, the juice was pressed in a membrane press, the free-run and pressed portions were combined and matured for 11 months in four 250-litre Qvevri, then racked into four 200-litre stainless steel tanks and matured for a further two months with a slight sulphite addition before bottling.
